Vegan parmesan is a dairy-free substitute that replicates the rich, nutty flavors of traditional parmesan. Beyond taste, vegan parmesan serves as a symbol of food inclusivity, allowing plant-based eaters to indulge in cherished flavors.

Makes 1 cup | ⏱️ 5 mins | gluten free 🌾
Ingredients:
1/2 cup raw cashews or almonds (or a mix)
1/2 cup raw walnuts
2 tbsp nutritional yeast
1 tsp garlic powder
2 tsp onion powder
1/2 teaspoon salt (adjust to taste)
Instructions:
Combine all ingredients in a food processor.
Pulse until the mixture achieves a coarse meal texture. Avoid over-blending, as you don’t want nut butter!
Taste and adjust salt or spices as desired.
Store in an airtight container in the refrigerator for up to two weeks.
