Vegan Parmesan

Vegan parmesan is a dairy-free substitute that replicates the rich, nutty flavors of traditional parmesan. Beyond taste, vegan parmesan serves as a symbol of food inclusivity, allowing plant-based eaters to indulge in cherished flavors.

Makes 1 cup | ⏱️ 5 mins | gluten free 🌾


Ingredients:

  • 1/2 cup raw cashews or almonds (or a mix)

  • 1/2 cup raw walnuts

  • 2 tbsp nutritional yeast

  • 1 tsp garlic powder

  • 2 tsp onion powder

  • 1/2 teaspoon salt (adjust to taste)


Instructions:

  1. Combine all ingredients in a food processor.

  2. Pulse until the mixture achieves a coarse meal texture. Avoid over-blending, as you don’t want nut butter!

  3. Taste and adjust salt or spices as desired.

  4. Store in an airtight container in the refrigerator for up to two weeks.
