Roasted Garlic Tofu Cream Cheese

If you're searching for a delicious vegan alternative to traditional cream cheese, look no further than roasted garlic tofu cream cheese. This creamy delight is bursting with flavor and versatility, making it perfect for spreading on bagels, toast, or as a dip for fresh vegetables.

Ingredients:

  • 350 grams firm tofu

  • Juice from one lemon

  • 1 1/2 tbsp olive oil

  • 1 bulb of garlic, plus 1 tbsp olive oil for roasting

  • 1/4 cup cashews

  • 1/3 cup nutritional yeast

  • 2 tbsp fresh dill, chopped


Instructions:

  1. Preheat the oven to 350 F (180 C).

  2. Cut the top off of a whole garlic bulb, drizzle it with a tablespoon of olive oil, and sprinkle with salt.

  3. Bake the garlic until it becomes soft. You can use a fork to test its tenderness. This takes about 20 minutes.

  4. Combine the tofu, lemon juice, olive oil, roasted garlic, cashews, and nutritional yeast in a food processor and blend until smooth.

  5. Mix thoroughly after adding the chopped dill.
