Chia seed pudding has captured the attention of health enthusiasts for good reason. It’s a flexible dish that blends well with various ingredients, making it a perfect canvas for creativity. One particularly exciting version is this Snickers Chia Seed Pudding. By combining the irresistible taste of Snickers bars with the nutritional benefits of chia seeds, this dish creates a delicious and healthier treat.


Why Chia Seeds?


Chia seeds, the tiny black seeds from the Salvia hispanica plant, pack a nutritional punch. They are rich in fiber, with nearly 11 grams per ounce, which helps with digestion and creates a sense of fullness. Chia seeds also provide an impressive amount of omega-3 fatty acids, essential for heart health, and about 4 grams of protein per serving.

Ingredients:

  • 3 tbsp chia seeds

  • 1 scoop of vanilla or cookie flavoured protein powder

  • 1 cup plant milk

  • 2 dates

  • 1 tbsp water

  • 2 - 3 tbsp dark chocolate chips

  • 1-2 tbsp crushed peanuts

  • flaky sea salt


Instructions:

  1. Begin by mixing the chia seeds, protein powder, and plant milk thoroughly. I recommend using a fork for mixing, as it tends to work better than a spoon. Allow the chia seed mixture to rest for 30 minutes.

  2. With the back of a fork, mash the dates with water to form a date paste.

  3. Place the date paste on top of the chia seed mixture.

  4. Melt the chocolate in the microwave using a small, microwavable glass bowl.

  5. Drizzle the melted chocolate over the pudding. Sprinkle with peanuts and flaky salt, then refrigerate overnight.
