Perfect Apple Pie

Apple pie is not just a dessert; it's a tradition that brings people together. Whether you are celebrating a holiday, hosting friends, or enjoying a quiet evening at home, the smell of a freshly baked apple pie fills the air with warmth and nostalgia.

Makes 12 servings | ⏱️ 1 hr & 20 mins
Crust Ingredients:
3 cups flour
1 1/4 tsp salt
2 tbsp granulated white sugar
1 tsp salt
1 1/4 cup cold vegan butter
1/3 cup ice cold water
1 tbsp plnt milk, for the top of the pie
1 tsp granulated sugar, for the top of the pie
Apple Filling:
6 large apples, peeled and sliced into 1/4 inch pieces
1 lemon, zested and juiced
2 tbsp granulated white sugar
2 tbsp light brown sugar
1 1/2 tsp cinnamon
1/4 tsp salt
1 tbsp water
1 1/2 tbsp cornstarch
1 tsp vanilla
Instructions:
Begin by preparing the pie crust. Add the flour, salt, sugar, and cold vegan butter to a food processor. Pulse until the mixture forms crumbly pieces.
Slowly add in the ice water until the dough forms. Transfer the dough onto a lightly floured surface. Divide the dough into two balls and place in the fridge for at least 2 hours.
When you're ready to bake, preheat the oven to 180°C (356°F).
Whilst the oven preheats, prepare the apple filling. Combine your sliced apples, lemon juice, lemon zest, white sugar, light brown sugar, cinnamon, salt, water, cornstarch, and vanilla in a frying pan. Cook over medium heat for 10 minutes, stirring occasionally.
When you're ready to assemble, remove both portions of the pie crust from the fridge. Using a rolling pin, roll each dough portion out large enough to hang over the edge of your pie baking dish.
Line a 9-inch baking dish with one of the pie crusts.
Pour the apple mixture into the baking dish lined with crust.
Cut inch-thick strips into the second pie crust. Lay each strip over the top of the pie creating a crisscross pattern.
Lightly coat the top of the pie crust with some plant milk and sprinkle a small amount of sugar over it.
Bake for 50 minutes or until the pie crust is golden brown.
Take the pie out of the oven and let it rest for 20-30 minutes before serving.
