Simple Pickled Onions

Pickled onions are more than just a colourful garnish; they add a unique sweetness and acidity that can transform ordinary dishes into something extraordinary.



Makes 1 cup | ⏱️ 25 mins | gluten free 🌾


Ingredients:

  • One red onion, thinly sliced

  • 1/2 cup red wine vinegar

  • 1/4 cup white vinegar

  • 3/4 cup water

  • 1 tbsp white sugar

  • 2 tsp salt

  • pinch of black pepper

  • Roughly 2 cups of boiling to soak the onions.


Instructions:

  1. Slice the red onion thinly and put it in a glass bowl.

  2. Bring about 2 cups of water to a boil and pour it over the onions, allowing them to sit for 20 minutes. This will soften the onions.

  3. Then, drain the onions and put them in a glass jar. Add the vinegars, sugar, salt, 3/4 cup of water, and a bit of black pepper.

  4. Let cool before storing in the fridge for up to two weeks.
