Pumpkin Chocolate Chunk Cookies

Pumpkin chocolate chip cookies are an irresistible treat that blend the comforting flavors of pumpkin with the sweetness of chocolate. When fall arrives, these cookies become staples in bakeries and homes, delightful people and boosting festive spirits. The pairing of pumpkin and chocolate is not just delicious; it is also easy to whip up and quite versatile.

Makes 12 cookies | ⏱️ 25 mins | gluten free 🌾
Wet Ingredients:
1/2 cup pure pumpkin puree
1/4 cup melted coconut oil
Vanilla
1/2 cup light brown sugar (or 1/4 brown and 1/4 white sugar)
1 tsp vanilla
Dry Ingredients:
1 tbsp ground flax
1 tsp cinnamon
1/2 tsp pumpkin pie spice, optional
1/2 tsp salt
1 tsp baking soda
3/4 cup almond flour
1/2 cup gluten free flour
1/2 cup chocolate chunks
Instructions:
Preheat the oven to 350 F (180 C) and line a baking sheet with parchment paper.
Combine the wet ingredients in a large bowl and mix thoroughly.
Next, add the dry ingredients, leaving out the chocolate chunks. Mix well, then gradually add the chocolate chunks.
Use an ice cream scoop or a large spoon to portion the batter onto the baking sheet. This recipe yields either 12 small cookies or 8 large cookies.
Bake in the oven for 20 minutes. Remove and allow it to cool for at least 15 minutes prior to serving.
