Peanut Butter Chocolate Dipped Cookies

If you’re craving a treat that combines timeless flavors with a modern twist, look no further. These classic vegan peanut butter cookies with a chocolate twist are here to satisfy your sweet tooth!

Ingredients:
2 tbsp ground flax seeds
3 tbsp water
1/2 cup vegan butter
1 cup peanut butter
3/4 brown sugar
1/4 white sugar
2 tsp vanilla
2 tbsp plant milk
2 cups all-purpose flour
1 tsp baking soda
1/2 cup vegan dark chocolate chips
Pinch of salt
Instructions:
Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
Combine the flax seeds and water in a small bowl, then allow it to sit until it develops a gel-like consistency.
In a separate bowl, combine the vegan butter, peanut butter, brown sugar, white sugar, plant milk, and vanilla.
Add the flax "egg" to the butter mixture.
Add the flour and baking soda and mix.
Shape the dough into balls with your hands and arrange them on the baking sheet, leaving about an inch of space between each one.
Flatten the cookies by pressing them down with a fork to create a cross pattern.
Bake for 20 minutes or until they turn golden brown.
After they are finished, take them out of the oven and allow them to cool.
In the meantime, melt the chocolate chips.
Dip the cookies into the chocolate and place in the fridge to let the chocolate harden.
