This Gluten Free Vegan Peach Cobbler will surely satisfy your sweet cravings while keeping your dietary preferences in mind.

Makes 6 small servings | ⏱️ 40 mins | gluten free 🌾
Filling Ingredients:
8-10 peaches, skin peeled off and cut into thin wedges
2 tbsp white sugar
2 tbsp light brown sugar
1 tsp cinnamon
1 tsp lemon
1 tsp vanilla
1 tbsp cornstarch
Topping Ingredients:
1 cup gluten free flour (I use the Bob' Red Mill All Purpose)
1/3 light brown sugar
1/4 white sugar
1 tsp baking powder
1/2 tsp cinnamon
1/4 plant milk
6 tbsp butter
Instructions:
Preheat the oven to 185°C (365°F).
Place all the filling ingredients in a saucepan over medium heat. Stir for five minutes until the peaches become tender. Once cooked, transfer the peaches to a small casserole dish.
In a bowl, mix the topping ingredients, adding the butter at the end. Use your hands or a fork to blend the butter into the flour mixture.
Spoon the batter over the peaches without spreading it.
Bake for 30 minutes and allow to cool before serving.
