This Gluten Free Vegan Peach Cobbler will surely satisfy your sweet cravings while keeping your dietary preferences in mind.

Makes 6 small servings | ⏱️ 40 mins | gluten free 🌾


Filling Ingredients:

  • 8-10 peaches, skin peeled off and cut into thin wedges

  • 2 tbsp white sugar

  • 2 tbsp light brown sugar

  • 1 tsp cinnamon

  • 1 tsp lemon

  • 1 tsp vanilla

  • 1 tbsp cornstarch


Topping Ingredients:

  • 1 cup gluten free flour (I use the Bob' Red Mill All Purpose)

  • 1/3 light brown sugar

  • 1/4 white sugar

  • 1 tsp baking powder

  • 1/2 tsp cinnamon

  • 1/4 plant milk

  • 6 tbsp butter


Instructions:

  1. Preheat the oven to 185°C (365°F).

  2. Place all the filling ingredients in a saucepan over medium heat. Stir for five minutes until the peaches become tender. Once cooked, transfer the peaches to a small casserole dish.

  3. In a bowl, mix the topping ingredients, adding the butter at the end. Use your hands or a fork to blend the butter into the flour mixture.

  4. Spoon the batter over the peaches without spreading it.

  5. Bake for 30 minutes and allow to cool before serving.
