Fortunately, vegan gluten-free baking opens new doors, allowing everyone to enjoy this delicious dessert. In this post, we will explore how to make a scrumptious vegan gluten-free banana cake that caters to a range of dietary needs.

Makes 9 servings | ⏱️ 1 hour & 20 mins | gluten free 🌾


Dry Ingredients:

  • 3 cups Bob’s Red Mill Gluten Free 1 to 1 baking flour

  • 1 tsp xanthan gum

  • 1 tsp baking powder

  • 1 tsp baking soda

  • 1/2 tsp salt

  • 1 tsp cinnamon


Wet Ingredients:

  • 1 tbsp ground flax

  • 2 tbsp water

  • 1 cup unsweetened plant milk

  • 4  bananas, smashed

  • 1/2 cup avocado oil

  • 2 tsp vanilla

  • 1 cup granulated sugar


Icing:

  • 1/2 cup butter

  • 1 1/2 cups icing sugar

  • 1 tsp Cinnamon

  • 1 tsp Vanilla

  • 1 tsp milk


Instructions:

  1. Preheat the oven to 350°F.

  2. Combine the ground flax with 2 tablespoons of water in a large bowl. Stir and allow it to rest for five minutes.

  3. Then, incorporate the plant milk, mashed bananas, avocado oil, vanilla, and sugar, and mix thoroughly.

  4. Gradually add the dry ingredients and gently stir until they are just incorporated. Avoid over-mixing.

  5. Place the cake mix into a 9 x 9 pan lined with parchment paper.

  6. Bake for one hour. Check if it's fully baked by inserting a butter knife into the center. If it comes out mostly clean, it is done.

  7. To make the icing, start by using a handheld mixer to beat the vegan butter until it is smooth.

  8. Then, blend the icing sugar, vanilla, and cinnamon until the mixture is smooth.

  9. Ensure the cake is fully cooled before applying the icing.
