Chickpea blondies are more than just a dessert; they are a creative solution for satisfying your sweet cravings while making conscious health choices. If you want to indulge but you still want to consume wholesome ingredients, these chickpea-based treats offer a flavorful alternative to traditional sweets. Made from legumes, chickpea blondies pack a punch in both taste and nourishment, putting a fun twist on your dessert experience.

Makes 9 large servings | ⏱️ 40 mins | gluten free 🌾
Ingredients:
2 small (425 grams) cans cooked chickpeas
4 tsp ground flax seeds
2/3 cup nut butter of choice (I used half peanut butter and half almond butter)
1 tsp baking powder
1 ripe banana
1/2 cup maple syrup
1 cup almond flour
1/2 cup chocolate chips
1 tbsp coconut oil
Instructions:
Preheat the oven to 350 F (180 C).
Place the chickpeas, flax seeds, nut butter, baking powder, banana, maple syrup, and almond flour into a food processor. Blend until the mixture is smooth.
Pour the batter into a 9x9 baking dish lined with parchment paper.
Bake for 30 minutes.
Remove from the oven and let cool.
Meanwhile, place the chocolate chips and coconut oil in a microwavable bowl and heat in the microwave until the chocolate chips are melted, being careful not to burn them.
Pour the chocolate over the chickpea batter and refrigerate until the chocolate has set.
Cut the blondies into squares and keep them in the refrigerator.
Note:
If you prefer, you can simply mix the chocolate chips into the batter instead of drizzling melted chocolate on top.
