Tropical Granola

Granola has been a breakfast favorite and a go-to snack for people everywhere. Recently, tropical granola has emerged, infusing traditional granola with vibrant flavors that awaken your taste buds. The mix of crunchy oats, dried fruits, pumpkin seeds, and coconut creates a flavorful experience that not only supports your nutrition but also transports you to a sunny paradise with every bite.

makes 3 cups | ⏱️ 30 mins | gluten free 🌾
Ingredients:
3 cups rolled oats
1/3 cup coconut oil, melted
1/3 maple syrup
1/2 tsp vanilla
1/2 cup dried mango, cut into small pieces
1/3 cup dried pineapple, cut into small pieces
1/3 cup toasted dried coconut - sub for shredded coconut if you prefer
1/2 cup banana chips
1/3 cup pumpkin seeds
Instructions:
Set the oven to 150°C (350°F) and prepare a baking dish by lining it with parchment paper.
In a small bowl, combine the melted coconut oil with the maple syrup.
Place 3 cups of oats in a large bowl and mix them with the coconut/syrup mixture.
Bake the oats for 25 minutes, stirring occasionally to ensure even cooking.
After 25 minutes, add the pumpkin seeds and continue baking for an additional 5 minutes. This allows the pumpkin seeds to get extra crispy.
Remove from the oven and let it cool completely before incorporating your dried mango, dried pineapple, toasted coconut, and banana chips.
Once fully cooled, add to a glass jar and store for up to two weeks.
