Cranberry Orange Granola

Granola is an easy prep ahead breakfast that can be enjoyed all week long. We make granola almost every Sunday to save us time during the weekday mornings.

Dry Ingredients

3 cups oats

3/4 cups slivered almonds

1/2 cup chopped cashews

1 1/2 tsp cinnamon

1 tsp salt

Wet Ingredients

1/4 cup melted coconut oil

1/4 cup maple syrup

1/4 cup almond butter


Add ins:

3/4 cup dried cranberries

Zest of one large orange

Directions:

  1. Preheat the oven to 300 F and line a large baking sheet with parchment paper.

  2. In a large bowl, mix together oats, almonds, chopped cashews, cinnamon and salt.

  3. In a small bowl, mix together melted coconut oil, maple syrup and almond butter until you get a well mixed creamy sauce.

  4. Pour the sauce over the oat mixture and combine well.

  5. Spread over the parchment paper and bake for 35 minutes removing from the oven once or twice to give it a stir so that all of the granola cooks evenly.

  6. Remove and let cool for 20 minutes.

  7. Add cranberries and orange zest. Store for up to a week.
