Blueberry Chia Seed Pudding

Chia seeds are highly nutritious and contain antioxidants, omega-3 fatty acids and are an excellent source of fibre. Chia seed pudding is easy to prepare and literally takes minutes. Make this the night before for a quick and easy on-the-go breakfast.



Servings: 2

Total Time: 5 minutes


Ingredients


1 cup unsweetened plant milk

1/2 cup blueberries

1 tbsp maple syrup

4 tbsp whole chia seeds

1/4 cup plant based yogurt

fresh berries for serving



Directions

  1. blend together the milk, blueberries and maple syrup.

  2. divide the chia seeds between two glass jars.

  3. divide the blueberry milk mixture between the two jars.

  4. place the jars in the fridge overnight.

  5. to assemble, add plant yogurt and fresh berries right before serving.


Tips

  • Feel free to experiment with different fruit and berries. Cherries work really well for the blended milk and fresh mango on top is delicious as well.

  • You can prepare these up to 3 days in advance.

  • Vanilla flavoured plant milk works too.
