Apple Banana Muffins

When you think of banana muffins, you think of fluffy, moist, and brimming with flavor. Now, imagine those delightful muffins enhanced with the sweetness baked apples. These incredibly easy apple banana muffins are not just another treat; they beautifully combine banana bread and apple pie, making them a must-try for anyone who enjoys baking.

Ingredients:
2 tbsp ground flax seeds
1/4 cup water
2 very ripe bananas
1/3 cup avocado oil
1/4 cup maple syrup
1 tsp vanilla
1 cup almond flour
1 cup all purpose flour
1 tsp baking powder
2 tsp cinnamon
1/2 tsp salt
1 peeled and chopped apple, I used Ambrosia but any apple will do
Instructions:
Set the oven to 350°F and line or grease a 12-cup muffin tin.
Combine the ground flax seeds and water in a medium bowl. Stir and allow it to rest for 5 minutes.
Add the bananas, avocado oil, maple syrup, and vanilla to the flax seed mixture. Use a fork to mash the bananas.
In another bowl, combine the almond flour, all-purpose flour, baking soda, cinnamon, and salt. Stir thoroughly.
Mix the wet ingredients with the dry ingredients and stir until just combined, being careful not to over mix.
Fold in the chopped apple and combine.
Divide the batter into the muffin tin and bake for 35 minutes,
Once done, let cool until transferring the muffins to a glass container for storage.
