Sweet potatoes are not just delicious; they are also incredibly versatile. They can be used in a wide range of dishes, from sweet to savory. One of the most exciting ways to enjoy sweet potatoes is by stuffing them with flavorful fillings. Vegan ground beef stuffed sweet potatoes is a dish that highlights the natural sweetness of the potato while introducing the rich taste of plant-based alternatives to traditional beef.

Vegan Ground Beef Ingredients:

  • 1 1/2 cup TVP (textured vegetable protein)

  • 1 cup broth

  • 1 tbsp tamari

  • 1 tbsp tomato paste

  • 1 tsp paprika

  • 1 tsp onion powder

  • 1 tablespoon of vegan Worcestershire sauce

  • 1 tsp ketchup

  • 3 cloves garlic


Cheesy Sauce Ingredients:

  • 2 medium russet potatoes, skin peeled and chopped

  • 4 medium carrots, skin peeled and chopped

  • 6 garlic cloves

  • 1/2 cup nutritional yeast

  • 2 tsp onion powder

  • 2/3 cup raw cashews

  • 1 cup water

  • 2 tbsp olive oil

  • 1 tsp salt


Assembly Ingredients:

  • Sweet potatoes stuffed

  • Pickled jalapeños

  • Black beans

  • Avocado

  • Chopped tomatoes

  • Chopped bell pepper


Vegan Ground Beef instructions:

  1. Add the TVP to a glass bowl and add in 1 cup of hot water with a crushed bouillon cube until the TVP has absorbed all the liquid.

  2. Meanwhile, prepare the sauce by mixing together the tamari, tomato paste, paprika, onion powder, Worcestershire sauce, and ketchup.

  3. Heat the avocado oil and minced garlic in a frying pan over medium heat, cooking until the garlic becomes tender.

  4. Add the TVP and sauce, then stir-fry for ten minutes.


Cheesy Sauce Instructions:

  1. In a small pot, boil 3 cups of water. Add the diced potatoes and carrots, and cook them until tender, about 6-8 minutes.

  2. After draining, let them cool down before adding the potatoes, carrots, and the rest of the sauce ingredients into a high-speed blender.


Assembly Instructions:

  1. Preheat the oven to 350°F (180°C).

  2. Take 3 medium sweet potatoes, pierce them in several places, and place them in the baking dish.

  3. Bake the sweet potatoes for about 30 minutes or until a fork can easily pierce them.

  4. After the potatoes have cooled, slice them in half. Use a fork to fluff the interior, then add the ground beef, avocado, tomatoes, bell peppers, black beans, and the cheesy sauce.
