Roasted Sweet Potato Fries with Creamy Chipotle Sauce

Roasted sweet potato fries are a delicious take on traditional french fries, blending sweet and savory flavors that everyone loves. When paired with creamy chipotle sauce, they become an unforgettable dish that's both filling and indulgent. In this post, we'll guide you through making these roasted sweet potato fries and the creamy chipotle sauce that brings them to life.


Makes 4 servings | ⏱️ 50 mins | gluten free 🌾


Sweet Potato Ingredients:

  • 2 large sweet potato

  • 1 tbsp olive oil

  • 1 tbsp cornstarch

  • 1 tbsp taco or fajita seasoning


Creamy Chipotle Ingredients:

  • 1 cup cashews, soaked for an hour before using

  • 2-3 chipotle peppers in adobo sauce

  • 2 garlic cloves

  • Juice of one lime

  • 1 tsp maple syrup

  • 1 tbsp olive oil

  • 2 tsp nutritional yeast

  • 1/2 cup water


Instructions:

  1. Preheat the oven to 350 F (180 C) and line a baking tray with parchment paper.

  2. Cut the sweet potato into strips. Soak them in cold water for five minutes. Then, take them out and pat them dry with a clean kitchen towel.

  3. Toss the sweet potatoes in the cornstarch. Then, mix in the oil and spices.

  4. Place the sweet potatoes on the parchment paper, ensuring they are spaced apart. Try to avoid having the sweet potatoes touch one another. Bake for 40 minutes, flipping them over halfway through.

  5. As the sweet potatoes bake, prepare the chipotle sauce. Place all the sauce ingredients in a small blender and blend until smooth.
