Creamy Harissa Butter Beans

Creamy harissa butter beans are a delightful combination of flavors and textures. These beans are not only easy to prepare but also offer a perfect blend of warmth and creaminess.

Makes 4 servings | ⏱️ 20 mins | gluten free 🌾


Ingredients:

  • 4-5 garlic cloves, minced

  • 1 shallot, minced

  • 2 tsp avocado oil

  • 2 cans of butter beans (398 ml each)

  • 1/2 cup sun dried tomatoes in oil, chopped into small pieces

  • 1 bouillon cube

  • 1 tsp harissa paste

  • 4-5 cups cherry tomatoes, cut into halves

  • 1 cup full fat coconut milk

  • 1/2 cup water

  • 3 tbsp nutritional yeast

  • 1/2 cup fresh basil, chopped


Instructions:

  1. Add the avocado oil to a large frying pan over medium heat.

  2. Then, add the garlic and onions and cook until the onions become translucent.

  3. Add the butter beans, sun-dried tomatoes, bouillon cube, harissa paste, and cherry tomatoes. Stir for five minutes.

  4. Then, add the coconut milk, water, and nutritional yeast. Reduce the heat to low and allow it to simmer, stirring occasionally, until the tomatoes are tender and the sauce has thickened.

  5. Right before serving, sprinkle some chopped basil and serve alongside some toasted crusty bread.
